Can we get any more RED? A cranberry muffin recipe with sweet tasting beets to add extra nutrition & color overkill. Seeing lots of color when opening up a muffin makes our mouths water and double red is just awesome. Use raw cranberries for this recipe and frozen cooked beets as beets are a pain in the backside to prepare. 👩🏻‍🍳

Cranberry/Beet

Ingredients

  • 1 ¾ cups flour

  • ½ cup sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ cup milk

  • ⅓ cup melted butter

  • 2 eggs

  • 1 tsp vanilla

  • 1 cup fresh cranberries (or frozen)

  • 1 cup cooked and mashed beets (about 2 small beets, thawed from frozen)

 

Directions

  1. Preheat Oven – Preheat oven to 375°F (190°C). Line a muffin tin with liners or grease lightly.
  2. Dry – In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt.
  3. Wet – In another bowl, mix mashed beets, milk, oil, eggs, and vanilla until smooth.
  4. Fold – Gradually fold wet ingredients & cranberries into the dry ingredients, stirring until just combined.
  5. Pour Batter – Divide the batter evenly into muffin cups, filling about ¾ full.
  6. Bake – Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
  7. Cool – Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
  8. Enjoy 👩🏻‍🍳

Notes

  • Sweeter – If you’d like it a bit sweeter, add ¼ cup more sugar or a drizzle of maple syrup.
  • Nuts – Walnuts or pecans go well with muffin recipes and add some crunch.
  • Storage – store in an airtight container for up to 3 days.
