Ingredients

  • 1 cup sweet rice flour (mochiko)

  • 3/4 cup sugar

  • 1 cup milk (or coconut milk for a richer flavor)

  • 1/2 cup fresh or dried cranberries, finely chopped

  • 1/4 cup cranberry juice

  • 1/4 teaspoon salt

  • 1/4 cup unsalted butter, melted

  • 1 tsp vanilla extract

 

Directions

  1. Preheat Oven – Preheat the oven to 350°F (175°C) and lightly grease a small baking dish.
  2. Dry Ingredients -In a mixing bowl, combine sweet rice flour, sugar, and salt.
  3. Wet Ingredients – Gradually add milk, cranberry juice, melted butter, and vanilla extract. Mix until smooth and well combined.
  4. Cranberries – Stir in the chopped cranberries.
  5. Pour – Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake & Cool – Bake for about 1 hour or until the top is set and slightly golden. Let cool completely before cutting into small squares or rectangles.

Notes

  • Dry Cranberries – If using dried cranberries, soak them in warm water or cranberry juice for 10 minutes to soften.
  • Texture – Serve at room temperature for the best texture.
  • Storage – Store leftovers in an airtight container at room temperature for up to 3 days.
