  • 1/2 cup rolled oats

  • 1/2 cup finely chopped dates (about 12)

  • 1 cup dried cranberries

  • 1/2 cup pecans

  • 1/2 cup semi-sweet chocolate chips

Directions

  1. Preheat – Set oven to 350º F to ensure it’s hot and ready when your dough is mixed.
  2. Cream – Beat the butter and sugar together until smooth, then mix in the vanilla and egg until fully combined.
  3. Combine Dry – Whisk the flour, baking soda, and salt together in a small bowl, then gradually add this to the butter mixture until the dough comes together.
  4. Mix-Ins – Gently fold in the oats and chopped dates until evenly distributed.
  5. Prepare Cranberries – Add dry cranberries then stir them into the dough.
  6. Finish Dough – Add the pecans and chocolate chips, stirring just until combined.
  7. Bake – Drop dough by tablespoons onto greased or parchment-lined baking sheets. Bake for 12–15 minutes, until edges are lightly browned and tops are set.
  8. Cool – Let cookies cool on the baking sheets for a few minutes before transferring to racks to cool completely.
  9. Store – Keep in airtight containers for soft cookies, or loosely covered if you prefer them crisp.
