Chicken Salad with Cranberries Recipe
INGREDIENTS
2 cups grilled chicken breast cubes
1/2 cup dried cranberries
1 apple diced
1/2 cup nuts
1/4 cup chopped green onion
1/2 cup broccoli
1/3 cup shredded carrot
Salt and pepper to taste
For the dressing:
1/2 cup cashews
3/4 cup water
1 clove garlic
1/4 tsp. salt
INSTRUCTIONS
– Soak cashews in water for at least 2 hours. Combine all ingredients for the dressing in a blender.
– Mix the salad ingredients in a medium bowl.
– Add the dressing and mix well.
