Ingredients
2 cups flour
½ cup butter (cut into pieces)
1 TBSP baking powder
¼ tsp salt
¼ cup sugar
2 cups fresh cranberries
¾ cup cream
Instructions
– Preheat oven to 400°F
– Place flour, butter, baking powder, sugar and salt into a food processor. Pulse 4-5 times until mixture is crumbly.
– Add cranberries. Pulse another 4-5 times.
– Add cream. Mix for 15 seconds, just until mixture comes together. Dough will be crumbly.
– Pour dough onto a large board or counter. Knead 4-5 times to bring everything together. Work dry pieces into the dough. Form dough into a ball.
– Sprinkle a bit of flour onto the counter and then flatten dough into an 8 inch circle. This will be the shape for your scones.
– Slice into 8 wedges
– Place wedges on a baking sheet lined with parchment paper. Wedges should be placed about ½” apart.
– Brush scones with cream
– Bake for 25-30 minutes until golden and baked through
– Cool
– Enjoy
