Another cranberry topping recipe because you can do so many things with it. Dessert toppings are my favorite, things like ice cream, waffles, pancakes and more. But even healthier foods can be made into quasi desserts with this topping; oatmeal, overnight oats, granola, Greek yogurt etc. 👩🏻‍🍳

Red Berries

Ingredients

  • 2 cups fresh cranberries

  • 1 cup frozen or fresh cherries (pitted and halved)

  • ½ cup water

  • ¼ cup orange juice

  • ¼ cup sugar or 1:1 sweetener (adjust to taste)

  • 1 tsp orange zest

  • ½ tsp cinnamon

  • ½ tsp vanilla

  • 1 tablespoon cornstarch (mixed with 1 tablespoon water for thickening)

  • 1 pack of gelatin

 

Directions

  1. Stove Top – In a saucepan over medium heat, combine cranberries, cherries, water, vanilla and orange juice. Stir occasionally.
  2. Add Sugar – Once the cranberries start to pop (about 5 minutes), add sugar (or sweetener), orange zest, and cinnamon. Stir well.
  3. Simmer & gelatin – Add pack of gelatin and reduce heat to low and simmer for 8-10 minutes, stirring occasionally.
  4. Cornstarch – Mix cornstarch with water and slowly pour that mixture into the sauce, stirring constantly. Simmer for another 2 minutes until thickened.
  5. Cool – Remove from heat and let cool slightly before serving.
  6. Enjoy 👩🏻‍🍳

Notes

  • Glossy – Take 1/2 the sauce and blend it, then mix it back in for a thick, glossy consistency.
  • Shiny – A small pat of butter stirred in at the end enhances the glaze.
  • Storage – Keeps well in the fridge for up to a week and thickens as it cools.
