Cranberry Cornmeal

Ingredients

  • 1 cup cornmeal

  • 1 cup all-purpose flour

  • 1/2 cup sugar

  • 1 TBSP baking powder

  • 1/2 tsp salt

  • 1 cup fresh or frozen cranberries

  • 1 cup milk

  • 1/4 cup melted butter

  • 1 egg

 

Directions

  1. Preheat oven to 375°F and grease an 8-inch round cake pan.
  2. In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. Stir in cranberries, coating them evenly in the dry mixture.
  4. In another bowl, whisk together milk, melted butter, and egg.
  5. Pour wet ingredients into dry ingredients and stir until just combined.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool before slicing and serving.

Notes

  • Storage – Store leftovers in an airtight container for up to three days.
  • Vanilla – For extra flavor, add a teaspoon of vanilla extract.
