Ingredients

  • 1 Β½ cups fresh or frozen cranberries

  • Β½ cup sugar or 1:1 granulated sweetener

  • ΒΌ cup water

  • 1 tsp vanilla

  • 2 cups heavy whipping cream

  • Β½ cup sweetened condensed milk

  • Β½ cup crushed meringue cookies or graham crackers (for texture)

  • ΒΌ tsp salt

  • Β½ tsp cinnamon (optional)

 

Directions

  1. Make Sauce – In a small saucepan, combine cranberries, sugar, vanilla, and water. Simmer over medium heat for 8-10 minutes until cranberries burst and the mixture thickens. Let cool completely.
  2. Whip Cream – In a large bowl, beat the heavy cream to stiff peaks.
  3. Rest of Ingredients – Gently fold in the sweetened condensed milk, cinnamon (if using), and salt. Swirl in the cooled cranberry sauce and crushed meringue or graham crackers.
  4. Whipped Cream – Whip the cream (with a stand mixer or electric hand mixer) with powdered sugar and vanilla until soft peaks form.
  5. Loaf Pan & Freeze – Line a rectangular loaf pan with plastic wrap, leaving some overhang. Pour the mixture into the pan, smoothing the top.
    Cover with plastic wrap and freeze for at least 6 hours or overnight.
  6. Serve – Remove from the pan using the plastic wrap overhang.
    Slice into festive rectangular pieces and serve immediately.

Notes

  • Extra Crunch – Sprinkle toasted nuts or dark chocolate shavings on top before freezing.
  • Garnish – Garnish with fresh cranberries, mint leaves, or a light dusting of powdered sugar for a nicer presentation.
  • Storage – Store in freezer, preferably in an airtight container of some kind to guard against freezer taste, for up to 2 weeks.
