Strawberry Cranberry Sauce with Vanilla Ice Cream!

Vanilla Ice Cream with Strawberry/Cranberry Sauce

The recipe is mostly for the homemade sauce of course, but after trying it over some premium, vanilla ice cream I decided it needed it’s own post as there are some particulars that need explicated in order to fully enjoy this rich, incredible dessert experience.

Ingredients

    • 2 cups fresh cranberries.

    • 2 cups fresh strawberries

    • 2 TBSP fresh lemon juice

    • 1/4 cup sugar

    • 1 tsp vanilla extract

    • 1 cup water or orange juice

 

Optional

  • 1/4 cup dried, sugar-free cranberries for texture

  • 1/4 cup of chopped almonds

Directions

  1. Place all ingredients into a large pot. Set stove to low.
  2. Pro tip: The the mixture simmer on low the whole time. It is faster on a higher setting but Strawberries are soft already and fresh cranberries take about 15 minutes to soften, so let it simmer uncovered the entire time until done. Stir occasionally.
  3. Cool in refrigerator for a few hours and that’s it.
  4. The sauce is ready to be used as a topping for your vanilla ice cream .
  5. Enjoy ✨

Notes

  • If you want a first-class experience: Use fresh berries and cream based ice cream. There is nothing like the flavor of fresh fruit combined with a high quality, creamy, vanilla ice cream. Look for cream to be the first ingredient.
  • Frozen berries work too and the taste experience will still be high quality. I would recommend that you cut the water or orange juice amount in 1/2 as frozen berries tend to be liquidy by default.
  • This sauce can freeze for up to entire year if put in the freezer after cooling.
  • To make this super healthy and take it out of the dessert category, replace the sugar in the sauce recipe for an equal amount of 1:1 granulated sweetener. Then find an sugar-free ice cream and you are as close as you will ever get to cheating mother nature.

A Famous Combination

One of the most famous desserts featuring both cranberries and strawberries together is the Cranberry Strawberry Trifle.

It’s a real good looking dessert that combines tart or sour cranberries and sweet strawberries, layered with creamy custard, sponge cake, and whipped cream.

The combination of these two berries creates a perfect flavor experience because they are opposites.

It’s a festive favorite and people who like tradition are partial to this dessert during the holiday seasons.

Ideas for your newly made Strawberry/Cranberry Topping:

Waffles: Add some to your Belgian waffles or thin crepes and upgrade the enjoyment factor of them by 10.

In Yogurt: Greek yogurt is high in protein and mixes very well with this sauce. If you’re looking to get more protein for yourself or your family this addition works well.
