Christmas Cranberry Cooler Recipe

Ingredients:

Cake

  • 2 cups fresh cranberries
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Streusal Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

An optional Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  • Preheat your oven to 350°F (175°C). Grease a round, thick cake pan and set aside.

  • Topping: In a small bowl, combine the flour, brown sugar, and cinnamon for the streusel topping.
    Add the cold, cubed butter and use a fork or your fingers to blend until the mixture resembles coarse crumbs. Set aside.

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients. Mix until just combined.
    Gently fold in the cranberries.
  • Spread half of the cake batter into the prepared pan, smoothing it with a spatula.
    Sprinkle half of the streusel topping evenly over the batter.
    Add the remaining batter on top, spreading it to cover the streusel layer.
    Finish by sprinkling the remaining streusel topping.

  • Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
    Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.

  • Optional Glaze

  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.

    Once the cake has cooled, drizzle the glaze over the top.
