Christmas Cranberry Cookies

Some recipes use dry cranberries, but to me there is nothing like the tart taste of the fresh berries to counter the sweet. Especially at Christmas time where sweet is abundant.

Christmas Cranberry Cookies

Ingredients:

  • 1 cup fresh cranberries, whole
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions:

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
