Cranberry Pavlova is a light and elegant, aristocratic-looking dessert that is comprised of a crisp meringue shell with a soft center, topped with whipped cream and a tart cranberry sauce. It’s derived from the classic Pavlova (same dessert but with kiwi and passion fruit), which is believed to have been created in the 1920s in honor of the Russian ballerina Anna Pavlova during her tours in Australia and New Zealand. 👩🏻‍🍳

Ingredients

  • 4 large egg whites

  • 1 cup sugar

  • 1 tsp cornstarch

  • 1 tsp white vinegar

  • 1 tsp vanilla extract

  • 1 cup heavy whipping cream

  • 2 TBSP powdered sugar

  • 1/2 cup fresh or frozen cranberries

  • 1/4 cup granulated sugar (for cranberries)

  • 1/4 cup water

 

Directions

  1. Preheat Oven – Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper. Draw a 9-inch circle as a guide.
  2. Meringue – In a clean bowl, beat egg whites until soft peaks form. Gradually add the sugar, one tablespoon at a time, beating until the mixture is glossy and stiff peaks form.
  3. More Meringue Making – Gently add in the cornstarch, vinegar, and vanilla extract.
  4. Shape – Spread the meringue onto the parchment paper, forming a round shape with a slight dip in the center.
  5. Bake – Bake for 1.5 hours, then turn off the oven and let the meringue cool completely inside.
  6. Prep the Berries – In a saucepan, combine cranberries, water, and 1/4 cup sugar. Simmer until the cranberries burst and form a sauce. Let cool.
  7. Whip Cream – Beat heavy cream with powdered sugar until soft peaks form.
  8. Put Together – Top the cooled meringue with whipped cream and drizzle with cranberry sauce.

Notes

  • Don’t Over-Whip – Avoid over-whipping the egg whites; they should be glossy, not dry.
  • Garnish – Add a few whole cranberries for garnish if you want it to look nicer.
  • Storage – Store leftovers in the fridge and eat within a day to keep the meringue crisp.

Edible flowers and a winterland look are very easy ways to make your Pavlova stand out from the rest. Or at least from all the other Pavlova’s your guests have seen, which, if they are not Russian, are likely zero. Doesn’t matter, better is simply better.

Sprinkle finely grated orange or lemon zest over the whipped cream to complement the cranberry’s tartness.

Meringue Crumble

Crush a bit of extra meringue and sprinkle it on top for additional texture. You can also add some finely chopped almonds or pecans to the meringue crumble, mix together and make it a nuttier experience.

Snow Effect

Sift powdered sugar over the entire dessert to create a “snowy,” winterland appearance.

Edible Flowers

Decorate with edible flowers such as violets or pansies to make it look more expensive, or even bakery-like quality.
