Ingredients
STREUSEL TOPPING

½ cup flour

1/3 cup brown sugar

½ tsp cinnamon

¼ cup unsalted butter, melted
CAKE BATTER

1 1/2 cups flour

2 tsp baking powder

1/2 tsp salt

1/2 cup sugar

1/2 cup unsalted butter, melted

2 large eggs

1 tsp vanilla

1/2 cup milk

1 ½ cups fresh or frozen cranberries
Directions
- Preheat Oven – Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.
- Batter – In a large bowl, whisk together flour, sugar, salt, and baking powder. Add melted butter, milk, eggs, and vanilla. Stir until smooth. Add cranberries and mix gently, then pour into pan.
- Streusel – In a small bowl, mix flour, brown sugar, and cinnamon. Stir in melted butter until crumbly.
- Top Cake – Evenly sprinkle the streusel over the batter.
- Bake – Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Cool – Cool for 10 minutes, then slice and serve.

Add a sweet cream cheese layer between the batter and streusel. In this case you would pour half the batter into the cake pan, then prepare a sweet cream cheese mix using; 8 oz (1 block) cream cheese, softened, ¼ cup granulated sugar, 1 egg yolk, 1 teaspoon vanilla extract. Stir them all in a separate bowl and then spread gently over the batter in the pan, making sure it doesn’t touch the edges. Then you pour the rest of the batter on top and proceed as above.
