Ingredients

  • 1 ½ cups flour

  • 1 tsp baking soda

  • 1 tsp ginger

  • 1 tsp cinnamon

  • ½ tsp cloves

  • ½ tsp salt

  • ½ cup unsalted butter, melted

  • ½ cup molasses

  • ½ cup brown sugar, packed

  • ½ cup milk (or buttermilk)

  • 1 large egg

  • 1 cup fresh or dried cranberries

 

Directions

  1. Preheat Oven – Preheat your oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry – In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. Combine Wet – In another bowl, mix the melted butter, molasses, brown sugar, milk, and egg until well combined.
  4. Combine All – Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid over mixing.
  5. Add Cranberries – Sprinkle in the crans and mix well.
  6. Bake – Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool – Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

  • Serve warm – Serve the loaf warm or at room temperature. It pairs well with whipped cream or a scoop of vanilla glaze..
  • Crunchy – For extra crunch, toss in a handful of chopped pecans or walnuts.
  • Storage – Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

A gingerbread loaf, or any gingerbread recipe really, has a lot of ingredients packed into it already. But, I always like to try to see how it can be just that little bit better.

Frosting

Use a cream cheese frosting lightly flavored with vanilla or orange zest to make it more ‘cakey’.

Nuts & Seeds

Fold in chopped pecans, walnuts, or slivered almonds for added crunch.

Infuse Berries

Soak dried cranberries in orange juice, brandy, or spiced rum for an added layer of flavor.

Flour Alternatives

White flour is best but you can always substitute a portion of the all-purpose flour with almond flour or whole wheat flour for a nuttier texture.
