Ingredients

  • 1 Β½ cups flour

  • Β½ cup sugar

  • 1 tsp baking powder

  • Β½ tsp salt

  • 1 TBSP matcha green tea powder

  • Β½ cup unsalted butter, cold and cubed

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup fresh (or dried see notes) cranberries, halved

  • ΒΌ cup honey or maple syrup

  • 1 TBSP cornstarch

 

Directions

  1. Preheat Oven – Preheat oven to 350Β°F (175Β°C). Line an 8×8-inch baking pan with parchment paper.
  2. Dry – In a bowl, mix flour, sugar, baking powder, salt, and matcha powder.
  3. Butter – Cut in the butter using a fork or pastry cutter until the mixture becomes crumbly.
  4. Wet – Stir in the egg and vanilla extract until the mixture comes together but remains crumbly.
  5. Crust – Press two-thirds of the mixture into the bottom of the prepared baking pan.
  6. Filling – In a separate bowl, toss cranberries with honey and cornstarch, then spread evenly over the crust. Then sprinkle the remaining crumb mixture over the cranberries.
  7. Bake – Bake for 35 minutes or until the top is lightly golden.
  8. Cool – Let cool completely before slicing into bars.

Notes

  • More Matcha! – For a stronger matcha flavor, increase the matcha powder to 1.5 TBSP.
  • Softer Filling – If you prefer a softer texture, use a mix of fresh and slightly mashed cranberries, or cranberry sauce. Fresh crans are always preferred and much better with this recipe, but you can use dried ones if that’s your preference, or if it’s all you have on hand.
  • Storage – Store in an airtight container for up to 3 days at room temperature or a week in the fridge.
