This is an interesting cookie recipe and one many people like to try for that reason. These cookies combine the buttery richness of regular shortbread, with some tart but sweet flavor of cranberry filling. Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 2/3 cup sugar

  • 1 teaspoon vanilla extract

  • 2 cups flour

  • 1/4 teaspoon salt

  • 1/2 cup cranberry sauce or cranberry jam

 

Directions

  1. Preheat Oven – Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make Dough – In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg yolk and vanilla extract, and mix until combined. Gradually add the flour and salt, mixing until a dough forms.
  3. Roll – Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  4. Use your Thumb – Using your thumb or the back of a small spoon, gently press into the center of each ball to create a small well.
  5. Sauce of Jam – Spoon a small amount of cranberry sauce into each indentation.
  6. Bake – Bake for 10-12 minutes or until the edges are lightly golden.
  7. Cool – Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Jam or Sauce – For these it’s easiest to use store-bought. But if you prefer to make your own, you can find easy recipes for cranberry jam and cranberry sauce using those links.
  • Drizzle – Drizzle with dark or white chocolate if you want them to look a little tastier.
  • Storage – Store in an airtight container at room temperature for up to 5 days.

These are unique enough cookies on their own to impress your guests, but why stop there when you can go the distance and make them believe you have some sort of formal training?

Glaze

Whisk powdered sugar with a (tiny) splash of orange juice or milk to make a simple glaze. Then all you have to do is drizzle it over the cookies to give it a glossy finish.

Garnish

Try a small piece of candied orange peel, a fresh cranberry, or a sprig of rosemary to the very center of each cookie after baking them, to give them a nicer finish.

Dip

Dip the bottoms of the cookies in melted dark or white chocolate, then let them harden to make them look like they cam from a bakery.

Texture Creativity

Roll the dough balls in finely, almost powdery chopped pistachios, almonds, or pecans before baking to make them crunchy with a fine, nut crust.
