A triple berry cobbler! Another simple cranberry recipe today that includes blueberries, strawberries and a few other ingredients, which can be easily found in one’s pantry. If you follow the recipe you’ll see that it’s not that difficult to make yet tastes awesome, especially with ice cream. Good to eat any time of year. Now, back to the cobbler; this recipe is pretty straightforward and will become a staple in your home if you like to have your desserts be both tasty AND healthy (as much as possible anyway).
Ingredients
Crust

- 2 cups flour
- 1/2 cup sugar
- 3/4 cup chilled, cubed butter
- 4-8 TBSP Chilled water
Filling
- 3 cups cranberries
- 3 cups blueberries
- 3 cups sliced strawberries
- 1 cup sugar
- 1 TBSP cornstarch
Directions
- Crust: add flour, salt and chilled butter into a mixing bowl. Add 1 TSP of chilled water and form a dough. Add one more TBSP of water and repeat until you get the desired consistency; the ball of dough must hold together.
- Roll out until it’s thin and wide.
- Grease a 9×13 inch rectangular pan. Line 1/2 the pie crust to the bottom of the pan.
- In a separate bowl stir together 3 berries, sugar and cornstarch, pour over pan. Take remaining crust and place over top, sealing it to the sides.
- Cut slits on top pie crust.
- Optional: sprinkle some sugar over top of crust before it goes into the oven.
- Bake at 375° for 60 minutes.

Notes & Options:
There are lots of ways to modify this cranberry cobbler to spice it up, down or just change it to suit your palate. You can try:
– Using fresh cranberries is always best but if you can’t then frozen work just as well.
– Add some nuts to the filling. I recommend chopped almonds.
– Some fruit like blueberries are not always easy to find so feel free to substitute with raspberries, cherries or even blackberries to counter the delicious but tart cranberry taste.
Make it Healthy – Replacing the sugar in the filling and topping with granulated sweetener will ensure your cobbler is sugar free and purely a starch food. Like eating fruit and crust – much healthier.
