Ingredients

  • 1 cup fresh cranberries

  • 3/4 cup sugar

  • 1/4 cup water

  • 1 envelope unflavored gelatin

  • 1/4 cup cold water

  • 3 large eggs, separated

  • 1 tsp vanilla extract

  • 1 baked 9-inch pie crust

  • Whipped cream, for topping

 

Directions

  1. In a saucepan, combine cranberries, sugar, and 1/4 cup water. Cook over medium heat until berries pop and mixture thickens, about 10 minutes.
  2. Press mixture through a sieve to remove skins, then return smooth pulp to saucepan.
  3. Sprinkle gelatin over 1/4 cup cold water in a small bowl. Let stand 5 minutes to soften.
  4. Add softened gelatin to warm cranberry mixture, stirring until dissolved. Cool slightly.
  5. Beat egg yolks until pale, then slowly stir into cranberry mixture along with vanilla. Chill until partially set.
  6. In a clean bowl, beat egg whites until stiff peaks form. Gently fold into cranberry mixture.
  7. Pour filling into baked pie crust. Chill until firm, about 4 hours or overnight.
  8. Top with whipped cream before serving.
