Making shortbread at Christmas time is something most of us do. This recipe is rich and delicious and doesn’t take that long to make. Shortbread Cookies are a modern twist on classic shortbread, a recipe with Scottish origins dating back to the 12th century. Adding cranberries and pistachio make it much more Christmasy (a real word, I swear) and so it’s becoming more and more popular to make this version 🎄.

Ingredients

  • 1 cup unsalted butter, softened

  • 1/2 cup powdered sugar

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1/4 tsp salt

  • 1/2 cup dried cranberries, chopped

  • 1/2 cup shelled pistachios, chopped

 

Directions

  1. Mixing Bowl – In a large mixing bowl, beat the butter and powdered sugar together until light and fluffy. Mix in the vanilla extract.
  2. Dry Ingredients – Gradually add the flour and salt, mixing until just combined.
  3. Fruit & Nuts – Add in the dried cranberries and chopped pistachios.
  4. Divide Dough – Divide the dough into two logs, about 2 inches in diameter. Wrap each in plastic wrap and refrigerate for at least 1 hour.
  5. Oven – Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Slice Dough – Slice the chilled dough into 1/4-inch thick rounds and place them on the prepared baking sheet, spacing them about an inch apart.
  7. Bake – Bake for 12-15 minutes or until the edges are lightly golden.
  8. Cool – Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Storage – Store in an airtight container for up to a week or freeze for to enjoy them later.
  • Drizzle – Drizzle with white chocolate to make it look more appealing.
  • Importance of Chilling Dough – Chilling the dough helps maintain the shape of the cookies during baking.
  • Nut Swap – Swap pistachios with almonds or walnuts if desired.

These cranberry shortbread cookies will be great, but we can always elevate ourselves with simple touches, and watch as others automatically diminish a bit. Cmon it’s fun 😈

Dip

Dip half of each cookie into melted chocolate and sprinkle with finely chopped pistachios. Then raise the price or put fewer onto the plate. Both increase their perceived value. 🙂

Playing with Texture

Add a sprinkle of flaky sea salt on top of the cookies right before baking to enhance the sweet and nutty flavors, and make them feel like there is another layer to them.
