I would say that this clafoutis is even better than Martha Stewart’s. Yeah I know she’s the queen of cuisine, but when you have a dessert with lots and lots of berries, and it’s simple to make, you have the advantage that only an ‘explosion’ of berries can provide. An intense, burst of sweet, tangy and tart with every bite. 👩🏻‍🍳

Ingredients

  • 1 cup fresh or frozen cranberries

  • ½ cup mixed berries (blueberries, raspberries, or strawberries)

  • 3 large eggs

  • ½ cup sugar

  • ½ cup flour

  • 1 cup whole milk

  • 1 tsp vanilla

  • ½ tsp almond extract

  • ¼ tsp salt

  • 1 TBSP melted butter

  • Powdered sugar (for dusting)

 

Directions

  1. Preheat Oven – Preheat oven to 350°F (175°C). Lightly butter a 9-inch pie dish or oven-safe skillet.
  2. Berries – Arrange the fruit—spread cranberries and mixed berries evenly in the dish.
  3. Batter – In a mixing bowl, whisk together eggs, sugar, flour, milk, vanilla, almond extract, salt, and melted butter until smooth.
  4. Pour – Pour the batter over the berries in the dish.
  5. Bake – Bake for 35-40 minutes, or until the top is golden and the center is set. It should puff up slightly and have a custard-like texture.
  6. Cool – Cool slightly, then dust with powdered sugar before serving.
  7. Enjoy 👩🏻‍🍳

Notes

  • Serve Warm – They say Clafoutis is best served warm, but also tasty at room temperature. I happen to like it chilled so try each and see what you like best.
  • Berry Swap – Try swapping some of the other berries (not cranberries) for cherries or blackberries for a slightly different taste.
  • Creamy – Clafoutis goes well with whipped cream or vanilla ice cream.

If you want each guest to have their own individual clafoutis, you can divide the batter into small ramekins and adjust the bake time like you would with cake battter to muffins. In this case it would be 12-20 minutes depending on the size of the ramekin. But your guests will love their own mini clafoutis, mostly because the name sounds exotic and they will feel special.
