Cranberry Linzer cookies are an adaptation of the classic Austrian Linzer Torte, which originated in Linz, Austria (hence then name), and is considered one of the oldest known cakes in the world. So remember that with each bite you are eating a piece of history, and gaining a few pounds in the process. At least they are fun pounds. 👩🏻‍🍳

Ingredients

  • 1 cup unsalted butter, softened

  • 2/3 cup sugar

  • 1 teaspoon vanilla extract

  • 2 cups flour

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup cranberry jam or sauce

  • Powdered sugar for dusting

Assemble:

  1. Preheat Oven – Preheat the oven to 350°F (175°C).
  2. Dough – Cream the butter and sugar together until light and fluffy. Add the vanilla extract. In a separate bowl, whisk together the flour, cinnamon, and salt. Gradually mix the dry ingredients into the wet ingredients until combined.
  3. Chill – Divide the dough in half, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Roll/Cut – Roll out the dough on a lightly floured surface to about 1/8 inch thick. Use a round or fluted cookie cutter to cut out cookies. On half of the cookies, cut out a smaller shape in the center to create a “window.”
  5. Bake – Place the cookies on a parchment-lined baking sheet and bake for 8–10 minutes or until the edges are lightly golden. Let cool completely.
  6. Pir the Cookies Together – Spread a thin layer of cranberry jam on the solid cookies. Place the cookie with the cut-out window on top, pressing gently. Dust with powdered sugar.
